Nowadays, ginger can be grown pretty much anywhere that is warm, humid and preferably somewhere at an elevation of at least 300m. That said, India is the World’s largest grower, producing 32% of the global total in 2018. That’s a lot of ginger. Fresh off a second place finish in the office’s ‘Best Ginger’ competition (behind Horatio Caine, of course), at TCSCo., we use dried ginger to ensure maximum flavour extraction.
