Does anything scream ‘tropical’ more than this iconic drupe? Coconut boasts an origin story shrouded in mystery, with its evolutionary history ominously described as ‘unknown’. Theories report that the fruit may have developed in Asia, South America or the Pacific Islands, so basically it is anyone’s best guess! A glutton for the sun, sand and sea, coconuts, as you well know, now colonise shorelines of tropical climates the world over. Often described as the ‘tree of life’, coconut is incredibly useful, different parts of the seed can provide food, fuel, building material, kindling… useless knowledge unless you find yourself stranded on a faraway desert island, perhaps with only a volleyball for company. With flavours that encompass notes ranging from creamy and lactic, fatty and toasted to sweet and fresh; there is a reason coconut is universally popular. Coconut often goes hand in hand with rum, get creative and try to conjure up your own flavour pairings.
