Is it ‘cacao’ or ‘cocoa’? All anyone really knows is that this is the pre-cursor to chocolate and it is quite simply delicious. Cacao nibs in particular, are small pieces of crushed cacao bean, the dried and fully fermented seeds of the cacao tree. You may not be surprised to learn that cacao trees will only grow in a limited geographical area defined as being 20 Degrees to the north and south of the equator. Luckily for us there is plenty of land-mass in this region capable of growing the millions of tonnes per year required to satisfy us chocolate-fiends. At The Custom Spirit Co. we utilise the nibs not only because “nib” is fun to say, but because the marriage of bitter and chocolatey flavours help to add layers of complexity to the palate and nose of your blended spiced rum.
